Have you ever wondered what to do with your sourdough discard? Look no further than this irresistible Sourdough Discard Banana Bread recipe! Combining the tangy goodness of sourdough discard with the sweetness of ripe bananas, this bread is a delightful way to reduce waste and enjoy a homemade treat.
Ingredients:
- 125g butter, softened
- 1/2 cup (100g) loosely packed brown sugar
- 1 tsp vanilla bean paste or vanilla extract
- 2 eggs
- 100g sourdough discard
- 2 cups of mashed banana (approximately 3 large bananas, very ripe)
- 1 3/4 cups (250g) plain flour
- 1 tsp baking powder
- 1 tsp bicarb soda
- 1 tsp cinnamon
- ⅓ cup golden syrup
Method:
Preheat oven to 160°C fan forced. Grease and line a bread tin with baking paper. (our Bread Tin is the perfect size for this)Cream together softened butter, brown sugar, and vanilla until pale and creamy in an electric mixer.
Add eggs one at a time, followed by sourdough discard, beating well after each addition.
Mix in mashed banana, flour, baking powder, bicarb soda, cinnamon, and golden syrup until just combined.
Pour the batter into the prepared tin, smoothing the top for an even bake.
Bake for approximately 60 minutes or until a skewer inserted into the centre comes out clean. If you have a bread tin that has a lid, bake with lid on for the first 50mins and remove the lid for the last 10)
Cool in the tin for 20 minutes, then transfer to a wire rack to cool completely before slicing.
