Sourdough Discard Spring Onion Pancakes

If you're looking for a quick and easy way to use up your sourdough discard with no waiting time, these Spring Onion Pancakes are just the ticket. They're quick to make and packed with flavour, making them perfect for any time of day. Here’s how you can whip them up in your kitchen:

Ingredients:

  • 200g Sourdough discard
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 tsp chopped garlic
  • 2-3 spring onions, white part sliced (save greens for later)
  • 1/2 cup chopped herbs (such as coriander, parsley, chives, basil etc)
  • 2-3 tbsp water

Method:

Prepare the Batter:

In a mixing bowl, combine the sourdough discard, salt, baking powder, chopped garlic, sliced spring onions (white part only), and chopped herbs. Stir until well combined.

Add 2 tablespoons of water initially and mix thoroughly. Add more water as needed to achieve a thinner batter consistency.

 

Cooking the Pancakes:

Heat a heavy-bottomed frying pan over medium heat. Add 2-3 tablespoons of oil to coat the bottom of the pan and heat until the oil shimmers.

Spoon a heaping 2 tablespoons of batter into the hot pan for each pancake, leaving space for more pancakes if your pan allows. Sprinkle some of the reserved chopped green spring onion on top of each pancake.

Cook for about 1-2 minutes, or until golden brown on the bottom.

Carefully flip the pancakes and cook for another 30-60 seconds on the second side, until golden brown and cooked through.

 

Serve and Enjoy:

Transfer the pancakes to a paper towel-lined plate to absorb excess oil. Repeat the cooking process with the remaining batter, adding more oil to the pan as needed.

Serve the pancakes immediately while hot. They can be enjoyed plain, with your favourite condiments, or with a dipping sauce.

 

Storage:

Store any leftover pancakes wrapped in the refrigerator for up to a day, or freeze them for longer storage. Reheat in a pan or simply in the toaster before serving.
