Loaded with roasted vegetables glazed in balsamic, creamy spreadable goat cheese, and fresh baby spinach, all nestled between slices of toasted sourdough, it’s a vegetarian delight you’ll crave again and again.
Ingredients:
- 2 slices of Sourdough Bread
- Butter
- Goats cheese
- Grilled zucchini
- Red onion
- Mushrooms
- Olive oil
- Sundried tomatoes
- Roasted red capsicum
- Baby Spinach
- Balsamic glaze
Method:
Start by cooking your mushrooms in a pan over medium heat, with a little oil and red onion. Saute until softened, about 5 minutes. Drizzle with balsamic glaze and a sprinkle of salt and toss to coat. Set aside
Grab your two slices of sourdough bread and spread butter on the outside sides. Lay open and begin building your filling. Spread the inside of the bread with goat cheese, then add your mushrooms, remaining vegetables and baby spinach, finish with another small drizzle of balsamic glaze. Pop the top slice on and grill using a sandwich press, or in a frying pan for a few minutes on each side.
